RICE DISH: DIRTY RICE

My daughter is one of the reasons I became a recipe developer. She is not that picky but loves a  good memory of food. She loves good presentation of food and not too much, she made this recipe a staple in our home.

I remember the first day I made this rice her comment was not encouraging, but because we have the rules of try it first and take a bite she tried and eventually ate all and asked for more. When it was her time to review the food she said ‘Dirty but yummy’ that was how we got the name of the recipe.

I used spinach in this recipe but a substitute for pumpkin leaf(ugu), uziza, bitter leaf or just mix the green of choice. seasoning is to your preference I used turmeric,ginger-garlic paste, salt, pepper etc.

INGREDIENTS

2 cups of boiled rice

Diced cooked chicken and prawn (I used 1 cup of both)

1/2 cup diced carrot and peas

1/3 cup corn

1 cup shredded spinach

1 cup blended pepper ( I used tomato, red pepper, habanero pepper and onions)

Spice( I used Tumeric powder, thyme, bay leaf, oregano and cumin)

salt and pepper to taste

1/4 cup of oil

DIRECTIONS

  1. Heat oil in a pan and add pepper mix. Let it fry for 7-10 minutes on medium heat.
  2. Add the spice, chicken, prawn and veggies. cover it to cook for 5-7 minutes.
  3. Add the boiled rice and mix all together. Add a little water like 1/4 cup if you are using non-stick ignore it.
  4. Add the spinach and turn off the heat, mix together and let the heat cook the spinach.
