I love frittata…
This recipe is a leftover turn fresh delicious meal. I don’t worry when I have leftovers all I do is keep it in the freezer for the frittata.
Frittata can make it to the lunch box, is a meal your kids will love. One good thing about this yummy meal is you can use what you have at hand, you can add any veggie your kid love, fish, chicken, ham, sausage the list goes on… Make it fun to eat for kids by using a muffin pan or shaped cake mold to make it. INGREDIENTS
6-7 eggs
1 red bell pepper (diced)
1 green bell pepper (diced)
1 onion (diced)
1 handful spinach,ugu or kale(I use spinach)
2 Irish or sweet potato(cooked)
1 handful peas
1 handful corn
1 tablespoon oil(I used coconut oil
1 teaspoon spices or seasoning cube
1 teaspoon salt
INSTRUCTIONS
Heat a frying pan add oil and onion. fry until translucent
Add red pepper, green pepper, potato, peas, corn, and spices sautee for 3-5 minutes. Do not cook it too much
In a bowl whisk the eggs, add spinach and pour it into the sauté veggies
Mix well, leave for 5-7 minutes then finish the cooking in the oven for 10 minutes, this will make the frittata to set.
