Banana is one of my kids favourite fruit, adding a banana to most of their breakfast give them joy, that does not mean they are not going to have it as a snack.
Banana bread is very easy to put together just mix wet to dry pour in the pan and bake, I will say banana bread is a bake version of pancake; do you agree? More so, you can make it a night before and do not worry about left-over because you can freeze it.
Banana is a powerhouse of nutrient, it is loaded with essential vitamins and minerals such as potassium, calcium, manganese, magnesium, iron, folate, niacin, riboflavin, and B6. It has a high content of fibre, both soluble and insoluble. The soluble fibre has the tendency to slow down digestion and keep you feeling full for a longer time; which is why bananas are often included in a breakfast meal so that you can start your day without worrying about the next meal.
This scrumptious sugar-free banana bread is kids and adult approved.

COOKING TIME: 60 mins
INGREDIENT 2 cups of flour 4-5 very ripe banana ½ cup date paste or honey ½ cup melted butter(1 stick) 2 eggs 2 tbsps. Milk ½ tsp. vanilla essence 1 tsp. baking powder 1 tsp. baking soda ¼ tsp salt
METHOD Preheat oven to 150 degrees line the pan or grease with oil and dust with flour. 1. Mash banana, mix the wet ingredient milk, date paste or honey, melted butter, vanilla and egg to the banana. Mix well to incorporate. 2. In a sieve add the dry ingredient flour, baking powder, baking soda and salt. Sieve it to the wet ingredient and mix well. Pour in a lined 9/10 inch pan 3. Bake for 50-55 minutes cool on a rack before serving. ENJOY!!!
