Today, I want to share the date paste I use in most of my baking. I have been using date paste to bake for more than three years now I must confess, it has been a staple in baking. Using date as a sweetener in my baking does not mean I don’t use sugar at all, NO! I use organic cane sugar once in a while, like thirty percent.
This date recipe can last two to three weeks in the fridge if you use a dry spoon to scoop it anytime you want to use it. Make sure it doesn’t come in contact with water. I used a little water to get a soft texture and placed it on the stove on low heat to drain the water. Draining the water on the stove will not make it go bad.

INGREDIENTS
500g de-seed dates
Half to 1 cup of water depending on how big your dates are.
METHOD
- Soak the date in the water for 30 minutes.
- Pour in a saucepan And place it on a low flame heat.
- Let the water drain completely.
- Blend with hand till smooth.
